A typical meal: ‘Fan’ and ‘cai’
Anyone who’s eaten Chinese food knows that steamed white rice always accompanies the meal. But what is perhaps less well known is just how integral rice and grain based foods are in Chinese culture. The Mandarin word 'fan'means both ‘rice’ and ‘food.’ In China, a good deal of casual talk centers around the expression, “ni chi fan le ma?” literally meaning, “Have you eaten rice (food) yet?” Regardless of region, a typical Chinese meal consists of a grain base— the 'fan'—such as rice, noodles, or buns, with meat and vegetable dishes,referred to as 'cai',adding flavor and variety to, but not overriding the integrity of, the 'fan'. The possibilities for 'cai' are enormous. China’s abundant variety of meats and vegetables are stir-fried, stewed, steamed, baked, roasted, oil and water-blanched, deep-fried…every kind of cooking method is well represented. Throughout China, pork is the most widespread and best-loved meat. In the north and west, pork and mutton are eaten in abundance, while south and east China have a profusion of fish and shellfish, as well as poultry, pork, and soy products.Seasonings in Chinese cooking are too numerous to count. A few commonly used seasonings are soy-sauce, fermented bean paste, black rice vinegar, rice wine, sesame oil, chili oil, ginger, red chili pastes, and garlic.Regardless of region, the food of China’s poorest is similar everywhere. These meals will usually consist of simple grain foods eaten with salty pickles to add flavor. Meat is used relatively sparingly, as it is expensive. However, Chinese peasant food is often quite tasty, and a trip to a country village is well worth the simpler fare.

Candied Banana Fritters - Zhejiang Cuisine [ by CC ]
Ingredients:
Banana\Frying oil\All-purpose flour\Cornstarch\Egg\Granulated sugar\Corn oil
Method:
1. In a bowl combine the egg, AP-flour, 10 grams cornstarch and water to form a smooth batter. Heat a frying pan half filled with oil till 180C/350F. Prepare a serving plate lightly greased with oil or butter.
2. Peel bananas, cut into 3 to 4 diagonal chunks and roll in 10 grams of cornstarch to coat. Dip into the batter, making sure each piece is evenly coated. Low the coated banana pieces into the heated oil and deep fry them until golden in color. Remove and drain.
3. Heat 5 grams of oil in another clean skillet, add sugar and stir fry over low heat until the sugar dissolves and turns into a syrup. Turn off the heat and return the fried bananas into the syrup. Quickly and carefully mix them and plunge into the prepared serving plate.
As the banana is so expensive, ordering this dessert in a Chinese restaurant may be a good idea. Furthermore, all girls, who are like sweet foods, will love it.

Twice-Cooked Pork
The “twice-cooked” part refers to the pork belly first being simmered in salted water for an hour until fully cooked, sliced, then stir-fried in its own juices. A home-style dish at heart, the pork is then coated with a hearty sauce of fermented black bean, chili bean sauce and yellow rice wine, and mixed with vegetables like cabbage and bell peppers.
When cooking, the important thing to remember is to pat your pork very dry after slicing, so that excess drops of water don’t cause the oil in the wok to splatter. Twice-cooked pork is a little more time-consuming than some of the Sichuan stir-fries I’ve featured so far, but worth a look if you want to delve further into regional Chinese cooking.

Pay attention to clean the fish in the peritoneal cavity

leek with aggs
The leek cut small fault in bowl, and put alittle salt, than standing a few minutes after stir evenly.the leaves turn green iand present some water, puting three eggs, seasoning mix evenly, and into a fry with pan. it is delicious taste.

Materials:glutinous rice, raisin, almond, peanut, candled jujube, lotus seed, suger, oil...
1.Wash and soak glutinous rice 5-6 hours, dry, add proper amount of water,steam for 1 hour.
2. In the meantime, prepare the other ingredients.
3. Add suger and oil to the rice while hot, mix well.
4. To do modeling, place rice and other ingredients in bowl.
5. Steam again for 15 minutes, turn over.
This is a famous traditional banquet dessert. And this is a significant dessert in the spring festival dinner. It means lucky and wealth.
